1 pound gnocchi (fresh or packaged)

8 oz chorizo sausage, casings removed and crumbled

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup heavy cream

1 cup diced tomatoes (canned or fresh)

1 cup spinach, roughly chopped

1 cup grated Parmesan cheese

1 teaspoon smoked paprika

Olive oil, for cooking

Salt and pepper, to taste

Fresh basil, for garnish

Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the surface. Drain and set aside.

    Cook the Chorizo: In a large skillet, heat a drizzle of olive oil over medium heat. Add the crumbled chorizo and cook until browned and cooked through, about 5-7 minutes. Use a wooden spoon to break up the chorizo as it cooks.

      Sauté the Aromatics: Add the chopped onion and garlic to the skillet with the chorizo. Sauté until the onion is translucent and fragrant, about 3-4 minutes.
