1 lb (450g) gnocchi (store-bought or homemade)

8 oz (225g) chorizo sausage, casing removed and crumbled

1 medium yellow onion, diced

3 cloves garlic, minced

1 cup (240ml) heavy cream

1 cup (about 100g) spinach, fresh or wilted

1 cup (about 100g) cherry tomatoes, halved

1 tsp smoked paprika

1/2 tsp red pepper flakes (optional for extra heat)

Salt and black pepper to taste

1/4 cup (25g) grated Parmesan cheese, plus more for serving

2 tbsp olive oil

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Gnocchi: In a large pot of salted boiling water, cook the gnocchi according to the package instructions, usually around 2-3 minutes until they float to the top. Drain and set aside.

    Cook the Chorizo: In a large skillet over medium heat, add the olive oil. Once hot, add the crumbled chorizo and cook for 5-7 minutes, stirring occasionally, until browned and crispy. Use a slotted spoon to remove the chorizo and set it aside, leaving the rendered fat in the skillet.

      Sauté Onion and Garlic: In the same skillet, add the diced onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for another minute, stirring frequently to avoid burning.

        Make it Creamy: Reduce the heat to medium-low. Pour in the heavy cream, stirring to combine, and let it simmer for 2-3 minutes to thicken slightly.

          Add Flavor Enhancers: Stir in the smoked paprika, red pepper flakes (if using), and season with salt and pepper. Add the halved cherry tomatoes and cook until they soften, about 3 minutes.

            Combine Everything: Add the cooked gnocchi, crispy chorizo, and fresh spinach into the creamy sauce. Gently toss everything together until the gnocchi is coated and the spinach wilts, about 2-3 minutes.

              Finish with Cheese: Remove from heat and stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning if necessary.
