Creamy Chicken Lasagna with White Sauce

9 lasagna noodles

1 pound ground chicken

2 cups ricotta cheese

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

2 cups spinach (fresh or frozen)

3 cups white sauce (homemade or store-bought)

1 small onion, diced

3 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Lasagna Noodles: Boil a large pot of salted water, and cook the lasagna noodles according to package directions. Drain and set aside.

    Prepare the Chicken Filling: In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, and sauté until fragrant. Add the ground chicken, Italian seasoning, salt, and pepper, cooking until the chicken is no longer pink. Stir in spinach and cook until wilted, about 2 minutes. Remove from heat and let it cool slightly.

      Mix the Cheese Filling: In a mixing bowl, combine the ricotta cheese, 1 cup of mozzarella cheese, and ⅓ cup of Parmesan cheese. Season with a pinch of salt and pepper. Mix well until all ingredients are combined.

        Assemble the Lasagna: Preheat the oven to 375°F (190°C). In a 9x13 inch baking dish, spread ½ cup of white sauce on the bottom. Lay 3 lasagna noodles over the sauce. Spread half of the chicken mixture over the noodles. Top with half of the ricotta cheese mixture, and then pour 1 cup of white sauce over it. Repeat the layers (noodles, chicken mixture, ricotta mixture, white sauce). Finish with the last layer of noodles, covering with remaining white sauce and topping it off with the remaining mozzarella and Parmesan cheese.

          Bake the Lasagna: Cover the baking dish with aluminum foil (try to tent the foil slightly so it doesn't touch the cheese). Bake in preheated oven for 25 minutes, then remove the foil and bake for an additional 15 minutes, or until the cheese is golden and bubbly.

            Cool and Serve: Once out of the oven, let the lasagna cool for about 10 minutes. Garnish with fresh basil leaves if desired, slice, and serve warm.
