1 lb chicken breast, diced

2 cups chicken broth

1 cup heavy cream

1 medium onion, finely chopped

3 cloves garlic, minced

4 tablespoons butter

1/4 cup all-purpose flour

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

4 large potatoes, peeled and cubed

1/2 cup milk (for mashed potatoes)

2 tablespoons sour cream (optional, for mashed potatoes)

Instructions
 

Prepare the Mashed Potatoes:

    - Place the cubed potatoes in a large pot, cover with water, and bring to a boil. Cook until tender, about 15-20 minutes.

      - Drain the potatoes and return them to the pot. Add the milk and sour cream (if using) and mash until smooth. Season with salt and pepper to taste. Set aside and keep warm.

        Make the Chicken Gravy:

          - In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

            - Stir in the minced garlic and cook for an additional minute.

              - Add the diced chicken to the skillet and cook until browned and cooked through, about 7-10 minutes.

                    - Pour in the heavy cream, and add the thyme, rosemary, salt, and pepper. Let it simmer for an additional 3-4 minutes until the gravy is creamy and reaches your desired thickness.
