12 oz penne pasta

1 lb boneless, skinless chicken breasts, diced

2 cups fresh spinach, roughly chopped

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

3 cloves garlic, minced

1 medium onion, diced

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Red pepper flakes (optional, for heat)

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with salt, pepper, and Italian seasoning. Cook for about 5-7 minutes or until the chicken is fully cooked and golden brown. Remove from skillet and set aside.

      Cook Vegetables: In the same skillet, add a little more olive oil if needed, then add the diced onion and minced garlic. Sauté for 2-3 minutes until onions are translucent and fragrant.

        Make Sauce: Lower the heat and add the heavy cream and chicken broth to the skillet, stirring well. Bring to a gentle simmer and add grated Parmesan cheese. Stir until the cheese is melted and the sauce is creamy.

          Combine: Add the cooked chicken back into the skillet, followed by the chopped spinach. Stir until the spinach wilts and everything is well combined. Add the cooked penne pasta to the skillet, tossing to coat in the creamy sauce.

            Serve: Taste and adjust seasoning, adding more salt, pepper, or red pepper flakes if desired. Serve immediately with extra Parmesan on the side for topping.
