1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups fresh mushrooms, sliced (e.g., cremini or button)

1 medium onion, diced

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 tablespoon olive oil

1 tablespoon butter

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

½ cup grated Parmesan cheese (optional)

Instructions
 

Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the chicken pieces with salt, pepper, and paprika. Add them to the skillet and sear until golden brown, about 5-6 minutes. Remove the chicken from the skillet and set aside.

    Sauté Vegetables: In the same skillet, add the butter. Once melted, add the diced onion and sauté for about 2-3 minutes until softened. Then, add the garlic and sliced mushrooms. Cook for an additional 5-7 minutes until the mushrooms are browned and tender.

      Create the Sauce: Pour in the chicken broth, scraping any browned bits from the bottom of the pan. Stir in the heavy cream, dried thyme, and any remaining salt and pepper. Let the sauce simmer for about 3-4 minutes, allowing it to thicken slightly.

        Combine Chicken & Sauce: Return the seared chicken to the skillet, stirring well to coat the chicken in the creamy sauce. Let it simmer together for another 5-7 minutes, ensuring the chicken is cooked through and the flavors meld.

          Add Cheese (Optional): If using, stir in the grated Parmesan cheese just before serving to add extra creaminess.
