1 lb (450g) boneless, skinless chicken thighs, cubed

1 package (16 oz) gnocchi (store-bought or homemade)

2 cups chicken broth

1 cup heavy cream

1 cup baby spinach

1 cup cherry tomatoes, halved

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried Italian herbs

1/2 teaspoon paprika

Salt and pepper to taste

Fresh parsley for garnish

Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the cubed chicken thighs, season with salt, pepper, and paprika. Cook until golden, about 5-7 minutes, stirring occasionally. Remove the chicken and set aside.

    Sauté the Vegetables: In the same skillet, add the chopped onion and minced garlic. Sauté for 2-3 minutes until the onion becomes translucent.

      Add the Gnocchi: Pour in the chicken broth and bring to a simmer. Add the gnocchi and let it cook for about 3 minutes, or until they float to the surface.

        Make it Creamy: Lower the heat and stir in the heavy cream, dried Italian herbs, and the sautéed chicken. Allow the mixture to simmer gently for about 5 minutes, stirring occasionally.

          Add Spinach and Tomatoes: Once the chicken is cooked through, add the baby spinach and halved cherry tomatoes. Cook for another 2-3 minutes until the spinach is wilted and the tomatoes are tender.

            Taste and Adjust: Season with additional salt and pepper to taste.
