1 lb ground beef

1 medium onion, chopped

2 cloves garlic, minced

3 medium-sized potatoes, peeled and diced

3 cups beef broth

1 cup heavy cream

1 cup sharp cheddar cheese, shredded

1 cup milk

1 tsp Worcestershire sauce

1 tsp Dijon mustard

1 tsp paprika

Salt and pepper to taste

½ cup diced pickles (optional, for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot over medium heat, brown the ground beef until no longer pink. Drain excess fat.

    Add the chopped onion and garlic to the pot. Sauté until the onion is translucent, about 5 minutes.

      Stir in the diced potatoes, beef broth, Worcestershire sauce, Dijon mustard, and paprika. Bring to a boil.

        Reduce the heat to a simmer and cover the pot. Cook until the potatoes are tender, about 15-20 minutes.

          Slowly stir in the heavy cream and milk, allowing the soup to become creamy. Heat through but do not bring back to a boil.

            Remove the pot from heat and stir in the shredded cheddar cheese until melted and well incorporated.

              Season with salt and pepper to taste. If desired, sprinkle with diced pickles and fresh parsley before serving.
