Ingredients
  

4 large carrots, peeled and grated

1 cup plain Greek yogurt

2 tablespoons mayonnaise

1 tablespoon honey

1 tablespoon apple cider vinegar

1/4 teaspoon ground cinnamon

1/4 cup raisins

1/4 cup chopped walnuts (or pecans)

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

In a large mixing bowl, combine the grated carrots, Greek yogurt, mayonnaise, honey, apple cider vinegar, and ground cinnamon. Stir well until all ingredients are fully combined.

    Add the raisins and chopped walnuts to the carrot mixture. Gently fold them into the salad until evenly distributed.

      Season with salt and pepper to taste, adjusting the flavors as desired.

        Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld.

          Before serving, give the salad a good stir and garnish with fresh parsley if desired.
