Ingredients

8 oz penne pasta

2 tbsp olive oil

2 boneless, skinless chicken breasts, cut into bite-sized pieces

1 tbsp Cajun seasoning

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, sliced

1 cup heavy cream

1 cup chicken broth

1 cup shredded Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the penne pasta according to package instructions until al dente. Drain and set aside.

In a large skillet, heat olive oil over medium-high heat. Season the chicken pieces with Cajun seasoning, salt, and pepper.

Add the seasoned chicken to the skillet and sauté for 6-8 minutes until cooked through and golden brown. Remove the chicken and set aside.

In the same skillet, add the diced onion, garlic, and sliced bell pepper. Sauté for about 3-4 minutes until the vegetables are soft.

Pour in the heavy cream and chicken broth, stirring well to combine. Allow the mixture to simmer for 3-5 minutes until slightly thickened.

Stir in the Parmesan cheese until melted and creamy. Add the cooked chicken and penne pasta back to the skillet, mixing until all ingredients are well-coated with the sauce.

Taste and adjust seasoning if necessary, adding more Cajun seasoning for extra kick.

Serve hot, garnished with chopped parsley on top. Enjoy your flavorful meal!
