12 oz fettuccine or penne pasta

2 tablespoons olive oil

1 lb boneless skinless chicken breasts, diced

1 tablespoon Cajun seasoning

Salt and pepper to taste

3 cloves garlic, minced

1 small onion, finely chopped

1 bell pepper (red or green), sliced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine or penne and cook according to package instructions until al dente. Drain and set aside.

    Season the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the diced chicken, Cajun seasoning, salt, and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add a little more olive oil if needed. Add minced garlic, chopped onion, and sliced bell pepper. Sauté until the vegetables are tender, about 3-4 minutes.

        Make the Cream Sauce: Pour in the chicken broth and bring it to a simmer. Add the heavy cream and reduce the heat to low, stirring continuously. Allow the sauce to thicken for about 5 minutes.
