Creamy Cajun Chicken Pasta

Ingredients
  

8 oz pasta (fettuccine or penne works great)

1 lb boneless, skinless chicken breasts, sliced into thin strips

2 tablespoons Cajun seasoning

2 tablespoons olive oil

1 medium onion, chopped

3 cloves garlic, minced

1 bell pepper (red or green), sliced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Season the Chicken: In a bowl, toss the sliced chicken with Cajun seasoning until well-coated.

      Sauté Chicken: In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken strips and cook for about 5-7 minutes, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

        Sauté Vegetables: In the same skillet, add the chopped onions and bell peppers. Sauté for about 3-4 minutes until the vegetables are tender. Add the minced garlic and cook for an additional 1 minute, stirring constantly to avoid burning.

          Make the Sauce: Pour in the chicken broth and bring to a simmer. Allow to cook for about 2 minutes, then lower the heat and add the heavy cream. Stir well, allowing the sauce to thicken slightly.

            Combine: Return the cooked chicken to the skillet and stir in the cooked pasta along with the grated Parmesan cheese. Mix thoroughly, adding reserved pasta water as needed for desired creaminess. Season with salt and pepper to taste.

              Serve: Garnish with fresh chopped parsley and extra Parmesan, if desired. Serve hot and enjoy your creamy Cajun chicken pasta!
