1 lb (450 g) beef sirloin, thinly sliced

2 tablespoons olive oil

1 medium onion, chopped

2 cloves garlic, minced

8 oz (225 g) mushrooms, sliced

1 teaspoon paprika

1 tablespoon Worcestershire sauce

1 cup beef broth

1 cup sour cream

2 tablespoons all-purpose flour

Salt and pepper to taste

8 oz (225 g) egg noodles

Fresh parsley, chopped, for garnish

Instructions
 

Cook the Egg Noodles: In a large pot, bring salted water to a boil and cook the egg noodles according to package directions until al dente. Drain and set aside.

    Brown the Beef: In a large skillet over medium-high heat, add the olive oil. Once hot, add the sliced beef sirloin in a single layer. Cook for about 3–4 minutes per side until browned. Remove from skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the chopped onion and cook for 2–3 minutes until translucent. Add the minced garlic and sliced mushrooms, cooking until the mushrooms are golden brown, about 5 minutes.

        Add Flavor: Sprinkle the paprika over the mushroom mixture and stir to combine. Pour in the Worcestershire sauce and beef broth, scraping the bottom of the pan to deglaze any browned bits. Bring to a simmer.

          Thicken the Sauce: In a small bowl, dissolve the flour in the sour cream and mix until smooth. Slowly stir this mixture into the simmering broth, allowing it to thicken. Cook for about 3 minutes.

            Combine and Serve: Add the browned beef back to the skillet. Stir to combine, heating everything through. Season with salt and pepper to taste.
