1 pound large shrimp, peeled and deveined

1 pound gnocchi (store-bought or homemade)

1 cup fresh basil leaves, packed

1/2 cup grated Parmesan cheese

1/3 cup pine nuts (toasted)

2 cloves garlic, minced

1/2 cup heavy cream

1/4 cup olive oil

1 tablespoon lemon juice

Salt and pepper to taste

Crushed red pepper flakes (optional, for heat)

Fresh basil leaves for garnish

Instructions
 

Make the Pesto: In a food processor, combine the fresh basil leaves, grated Parmesan cheese, toasted pine nuts, minced garlic, and lemon juice. Pulse until finely chopped. Slowly add the olive oil while processing until a smooth pesto forms. Set aside.

    Cook the Gnocchi: In a large pot of salted boiling water, add the gnocchi. Cook according to package instructions until they float to the surface (usually about 2-3 minutes). Drain and set aside.

      Sauté the Shrimp: In a large skillet over medium heat, add a drizzle of olive oil. Once hot, add the shrimp and season with salt, pepper, and crushed red pepper flakes if you’d like some heat. Cook for about 2-3 minutes on each side or until the shrimp turn pink and are opaque. Remove from skillet and set aside.

        Combine and Create Cream Sauce: In the same skillet, lower the heat and add the heavy cream to the remaining shrimp juices. Stir to combine and heat through. Then, add the prepared pesto and mix well until heated.
