8 oz (225g) fettuccine or your pasta of choice

6 slices of thick-cut bacon, diced

1 cup (150g) cremini or button mushrooms, sliced

3 cloves garlic, minced

1 cup (240ml) heavy cream

1 cup (100g) grated Parmesan cheese

1 tablespoon olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

A pinch of red pepper flakes (optional, for a kick)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1 cup of the pasta cooking water, then drain and set aside.

    Cook the Bacon: In a large skillet, heat the olive oil over medium heat. Add the diced bacon and cook until crispy, about 5-7 minutes. Use a slotted spoon to remove the bacon from the skillet, leaving the rendered fat in the pan.

      Sauté the Mushrooms: In the same skillet with the bacon fat, add the sliced mushrooms. Sauté until they are golden brown, approximately 4-5 minutes. Add the minced garlic and cook for another minute until fragrant.

        Make the Sauce: Lower the heat to medium-low. Pour in the heavy cream and stir to combine. Allow the mixture to simmer for about 2 minutes, then gradually add the grated Parmesan cheese while stirring the sauce until it melts and becomes creamy.

          Combine Pasta and Sauce: Add the cooked pasta to the sauce, tossing to coat. If the sauce is too thick, gradually add some reserved pasta water until desired consistency is achieved.

            Add Bacon and Season: Stir in the crispy bacon and season with salt, pepper, and red pepper flakes (if using) to taste. Mix until everything is well combined.
