Ingredients
  

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 pound ground sausage (or ground beef)

1 teaspoon Italian seasoning

Salt and pepper, to taste

4 cups chicken broth

1 (14.5 oz) can diced tomatoes, undrained

8 lasagna noodles, broken into pieces

1 cup heavy cream

1 cup grated Parmesan cheese, plus extra for garnish

2 cups fresh spinach

1 cup ricotta cheese

Chopped fresh basil or parsley, for garnish

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 3–4 minutes until softened. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

    Cook the Meat: Add the ground sausage (or beef) to the pot, breaking it up with a spoon. Cook until browned and no longer pink, about 5–7 minutes. Drain excess fat if necessary.

      Season and Simmer: Stir in the Italian seasoning, salt, and pepper. Pour in the chicken broth and add the undrained can of diced tomatoes. Bring the mixture to a boil.

        Add the Noodles: Once boiling, add the broken lasagna noodles. Reduce heat and let simmer for about 10–12 minutes, or until the noodles are tender.

          Make it Creamy: Stir in the heavy cream and Parmesan cheese until melted and combined. Add the fresh spinach and cook for another 2–3 minutes until wilted.

            Incorporate the Ricotta: Remove the soup from heat and gently spoon dollops of ricotta cheese into each bowl when serving. For extra creaminess, you can stir it into the soup or leave it as a topping.

              Garnish and Serve: Ladle the soup into bowls and garnish with additional grated Parmesan cheese and chopped fresh basil or parsley.
