12 lasagna noodles, broken into pieces

1 tablespoon olive oil

1 small onion, diced

3 cloves garlic, minced

1 pound Italian sausage (or ground turkey)

4 cups chicken broth

1 cup heavy cream

1 cup whole milk

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Salt and black pepper to taste

2 cups fresh spinach leaves

2 cups ricotta cheese

2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Fresh basil for garnish (optional)

Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.

    Brown the Sausage: Add the Italian sausage (or ground turkey) to the pot, breaking it apart with a wooden spoon. Cook until browned and cooked through, about 7-8 minutes. Drain excess fat if necessary.

      Simmer the Soup Base: Pour in the chicken broth, heavy cream, and whole milk. Stir in the Italian seasoning, red pepper flakes (if using), salt, and black pepper. Bring this mixture to a gentle simmer.

        Add the Noodles: Once the soup is simmering, add the broken lasagna noodles. Cook for about 10-12 minutes, or until the noodles are tender.

          Incorporate the Greens: Stir in the fresh spinach leaves and let them wilt for 2-3 minutes.

            Mix the Cheeses: In a medium bowl, combine the ricotta cheese and half of the mozzarella cheese. Stir this mixture into the pot until well distributed.
