1 cup whole milk

1/2 cup granulated sugar

1/4 cup cornstarch

1/4 tsp salt

2 large egg yolks

2 tbsp unsalted butter

1 tsp pure vanilla extract

6 large flour tortillas

1/2 cup heavy cream

1/4 cup powdered sugar

1 tsp vanilla extract (for whipped cream)

Fresh berries (for garnish)

Optional: chocolate or caramel sauce for drizzling

Instructions
 

Make the Pudding: In a medium saucepan, whisk together milk, granulated sugar, cornstarch, and salt over medium heat. Stir continuously until the mixture thickens and begins to bubble, about 5-7 minutes.

    Combine with Egg Yolks: In a separate bowl, whisk the egg yolks, then temper them by gradually adding a small amount of the hot pudding mixture, whisking constantly. Once blended, return the egg yolk mixture to the saucepan and cook for another 2 minutes until thickened.

      Flavor the Pudding: Remove from heat and stir in the butter and vanilla extract until smooth. Transfer pudding to a bowl, cover with plastic wrap directly on the surface to prevent a skin from forming, and refrigerate until cool, about 1 hour.

        Prepare the Tortillas: While the pudding cools, warm the tortillas slightly on a dry skillet to make them pliable.

          Assemble the Rolls: Spread a generous spoonful of the cooled vanilla pudding onto each tortilla, then roll them up tightly. Repeat for all tortillas.

            Make the Whipped Cream: In a mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
