4 bone-in pork chops (about 1 inch thick)

Salt and pepper, to taste

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

8 oz fresh mushrooms (such as cremini or button), sliced

2 cups chicken broth

1 cup heavy cream

1 tablespoon Worcestershire sauce

1 teaspoon thyme (fresh or dried)

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Pork Chops: Season the pork chops generously with salt and pepper on both sides.

    Sear the Pork Chops: In a large skillet, heat the olive oil over medium-high heat. Add the pork chops and sear for about 4-5 minutes per side, or until golden brown. Remove the chops from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the diced onion and garlic. Sauté for 2-3 minutes until the onion is translucent. Add the sliced mushrooms and cook until they release their moisture and become tender, about 5-7 minutes.

        Prepare the Soup Base: Stir in the chicken broth and Worcestershire sauce. Bring the mixture to a simmer and let it cook for about 5 minutes.

          Add Cream and Seasoning: Lower the heat and stir in the heavy cream and thyme. Let it simmer gently for another 5 minutes while stirring occasionally until slightly thickened.

            Combine Chops and Sauce: Return the seared pork chops to the skillet, spooning some of the creamy mixture over the chops. Cover and cook on low heat for an additional 10-15 minutes until the pork is cooked through and tender (internal temperature should reach 145°F).
