4 large eggs

2 tablespoons cream cheese, softened

2 tablespoons fresh chives, finely chopped

1/4 cup shredded cheddar cheese

1 tablespoon milk

Salt and pepper, to taste

1 tablespoon butter

Optional garnishes: additional chives, cherry tomatoes, or a sprinkle of paprika

Instructions
 

Prep the Ingredients: In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined. Set aside.

    Make the Filling: In another small bowl, mix the softened cream cheese with the chopped chives and cheddar cheese until well combined. This will be your filling.

      Cook the Eggs: Heat a non-stick skillet over medium heat and add the butter, swirling it around to coat the pan. Once the butter is melted and slightly bubbling, pour in the egg mixture.

        Form the Omelet: Let the eggs cook undisturbed for about 2-3 minutes, or until the edges start to set. Using a spatula, gently lift the edges to allow any uncooked eggs to flow to the bottom.

          Add the Filling: Once the omelet is mostly set but still slightly runny on top, spoon the cream cheese and chive mixture onto one half of the omelet.

            Fold and Finish: Carefully fold the other half of the omelet over the filling. Continue to cook for another minute until the cheese is melted and the omelet is fully set.

              Serve: Gently slide the omelet onto a plate. Garnish with additional chives, sliced cherry tomatoes, or a sprinkle of paprika if desired.
