1 teaspoon vanilla extract

2 large eggs

½ cup sour cream

½ cup heavy cream

Zest of 1 orange

For the Cranberry Pecan Topping:

1 cup fresh cranberries

½ cup sugar

½ cup chopped pecans

½ teaspoon cinnamon

1 tablespoon orange juice

1 tablespoon cornstarch mixed with 2 tablespoons cold water

Instructions

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a medium bowl, combine graham cracker crumbs, melted butter, sugar, and cinnamon. Mix until well combined.

        - Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and let cool.

          Make the Cheesecake Filling:

            - In a large mixing bowl, beat the softened cream cheese with sugar and vanilla extract until smooth.

              - Add the eggs one at a time, mixing well after each addition.

                - Mix in sour cream, heavy cream, and orange zest until fully incorporated.

                  - Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula.

                    Bake the Cheesecake:

                      - Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly.

                        - Turn off the oven and leave the cheesecake inside for an additional hour to cool slowly.

                          - Remove from the oven and refrigerate for at least 4 hours, preferably overnight.

                            Prepare the Cranberry Pecan Topping:

                              - In a medium saucepan over medium heat, combine cranberries, sugar, chopped pecans, cinnamon, and orange juice. Cook until the cranberries start to pop and release their juices (about 5-7 minutes).

                                - Stir in the cornstarch mixture and cook until the topping thickens (about 2-3 minutes). Remove from heat and let cool.

                                  Assemble the Cheesecake:

                                    - Once the cheesecake is chilled, carefully remove it from the springform pan.

                                      - Spread the cranberry pecan topping evenly over the cheesecake.

                                        Serve:

                                          - Slice your Cranberry Pecan Cheesecake Delight and enjoy this festive treat. Garnish with extra pecans or a dollop of whipped cream if desired.
