Ingredients

2 cups fresh or frozen cranberries (thawed if frozen)

1 cup granulated sugar (adjust sweetness to taste)

1/2 cup water

1 (8 oz) package cream cheese, softened

1 cup heavy whipping cream

1 (12 oz) container of whipped topping (such as Cool Whip)

1 cup mini marshmallows

1/2 cup chopped pecans (optional)

1/2 cup shredded coconut (optional)

Fresh mint leaves for garnish (optional)

Instructions

Make Cranberry Sauce: In a saucepan, combine the cranberries, granulated sugar, and water. Bring to a boil over medium heat, then reduce to a simmer. Cook for about 10-15 minutes or until the cranberries are soft and the mixture thickens. Remove from heat and allow to cool to room temperature.

Prepare the Base: In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Set aside.

Whip the Cream: In a separate bowl, whip the heavy whipping cream until stiff peaks form. Gently fold in the whipped topping until fully combined.

Combine Mixtures: Once the cranberry sauce has cooled, gently fold it into the cream cheese mixture until well blended. Then, fold in the whipped cream mixture until smooth. Be careful not to deflate the whipped cream.

Add Extras: Stir in the mini marshmallows, chopped pecans, and shredded coconut if using. Mix well to distribute evenly.

Chill: Transfer the mixture into a serving bowl or individual dessert cups. Cover and refrigerate for at least 2-3 hours, or until chilled and set.

Serve: Before serving, garnish with fresh mint leaves if desired. Scoop into bowls and enjoy this refreshing dessert salad!
