1 round sourdough loaf (about 1 pound)

8 oz Brie cheese, cut into small cubes

1 cup fresh or frozen cranberries (thawed if frozen)

1/4 cup sugar (adjust to taste)

1/4 cup chopped pecans (optional)

2 tablespoons unsalted butter, melted

1 teaspoon dried thyme or rosemary (optional)

1/2 teaspoon garlic powder

Fresh parsley, for garnish (optional)

Prepare the Cranberry Mixture: In a small saucepan, combine the cranberries and sugar over medium heat. Cook for about 5-7 minutes, until the cranberries burst and create a chunky sauce. Remove from heat and let cool.

    Preheat the Oven: Preheat your oven to 350°F (175°C).

      Prepare the Sourdough: Take your sourdough loaf and, using a sharp bread knife, cut it into a crosshatch pattern (making diagonal cuts both ways), ensuring you don't cut all the way through the bottom.

        Assemble the Filling: Gently insert the cubes of Brie cheese into the cuts of the bread, making sure to evenly distribute the cheese throughout. Then, spoon the cranberry mixture into the crevices, followed by a sprinkle of chopped pecans if using.

          Season the Bread: In a small bowl, mix the melted butter, garlic powder, and dried herbs. Brush this mixture all over the top of the bread, allowing it to seep into the cuts.

            Wrap and Bake: Place the prepared bread on a baking sheet lined with parchment paper. Cover it loosely with aluminum foil to prevent over-browning. Bake in the preheated oven for 15 minutes.
