1 cup sushi rice

1 ¼ cups water

2 tablespoons granulated sugar

1 tablespoon rice vinegar

1 teaspoon vanilla extract

4 large marshmallows

4 squares milk chocolate (or any chocolate of choice)

4 sheets nori (seaweed)

1 cup crushed graham crackers

Optional: sliced strawberries or banana for extra flavor

Instructions
 

Prepare the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. Drain and place the rice in a pot with 1 ¼ cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes or until the water is absorbed. Remove from heat and let it sit for 10 minutes.

    Season the Rice: In a small bowl, mix the sugar, rice vinegar, and vanilla extract. Heat it briefly in the microwave (about 10 seconds) to dissolve the sugar. Once the rice has rested, fluff it with a fork and gently fold in the seasoned vinegar mixture. Let it cool to room temperature.

      Prepare the S’more Ingredients: While the rice is cooling, melt the chocolate squares in a microwave-safe bowl in 15-second intervals until smooth. You can also toast the marshmallows over a campfire or under a broiler until golden and slightly puffed.

        Assemble the Sushi: Lay a sheet of nori on a bamboo sushi mat (or a clean cutting board). With wet hands, spread a thin layer of sushi rice (about ¾ cup) over the nori, leaving about an inch of space at the top edge. Sprinkle a layer of crushed graham crackers evenly over the rice.

          Add Filling: Place 1 melted chocolate square and 1 toasted marshmallow across the middle of the rice-covered nori. Add sliced strawberries or banana if desired.

            Roll the Sushi: Using the bamboo mat, carefully roll up the nori from the bottom, applying gentle pressure to keep the filling inside. Seal the edge of the nori with a little water. Let it rest seam-side down for a few moments.

              Slice and Serve: Using a sharp, wet knife, slice the roll into bite-sized pieces (about 1-2 inches thick). Repeat with the remaining ingredients. Arrange the pieces on a platter and serve with extra chocolate sauce or marshmallow fluff for dipping.
