1 pound boneless, skinless chicken breasts

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

4 cups chicken broth

2 cups water

1 teaspoon dried thyme

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

3 medium carrots, sliced

2 celery stalks, sliced

8 ounces egg noodles

1 cup cream cheese (cubed)

1 cup shredded cheddar cheese

½ cup chopped green onions (for garnish)

Fresh parsley (optional, for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add garlic and sauté for another 1-2 minutes until fragrant.

    Add the chicken breasts, chicken broth, and water to the pot. Stir in thyme, onion powder, garlic powder, paprika, salt, and pepper. Bring the mixture to a gentle boil.

      Once boiling, reduce the heat to low, cover, and let it simmer for about 25 minutes, or until the chicken is cooked through.

        Remove the chicken from the pot and shred it using two forks. Set aside.

          Add the sliced carrots and celery to the broth and let it simmer for about 10 minutes until tender.

            Stir in the egg noodles and continue cooking for another 7-8 minutes, or until the noodles are al dente.

              Return the shredded chicken to the pot. Add the cream cheese and stir until melted and creamy.

                Add the shredded cheddar cheese and stir until melted and well combined. Adjust seasoning with salt and pepper as desired.

                  Serve hot, garnished with chopped green onions and parsley if using, for an extra burst of flavor.
