3-4 lbs beef chuck roast

2 tablespoons olive oil

1 large onion, chopped

3 cloves garlic, minced

4 cups beef broth

2 cups carrots, cut into 2-inch pieces

2 cups potatoes, diced

1 cup celery, chopped

2 tablespoons tomato paste

2 teaspoons dried thyme

2 teaspoons dried rosemary

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons Worcestershire sauce

1 tablespoon balsamic vinegar

Fresh parsley, chopped (for garnish)

Prepare the Roast: Pat the beef chuck roast dry with paper towels to remove excess moisture. Season it generously with salt and black pepper.

    Sear the Meat: In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat. Once hot, add the chuck roast and sear it on all sides until browned, about 4-5 minutes per side. Remove the roast and set it aside on a plate.

      Sauté Vegetables: In the same pot, add the chopped onion and sauté until softened, about 4 minutes. Add the minced garlic and cook for an additional minute, until fragrant.

        Deglaze the Pot: Stir in the tomato paste and cook for 2 minutes. Then, pour in the beef broth, scraping up any browned bits from the bottom of the pot.

          Combine Ingredients: Add the seared roast back into the pot. Surround it with the carrots, potatoes, and celery. Sprinkle in the thyme, rosemary, Worcestershire sauce, and balsamic vinegar. Stir to combine.

            Slow Cook: Bring the mixture to a gentle simmer. Cover the pot with a lid and reduce the heat to low. Let it cook for 4-5 hours (for a tender roast), or on high in a slow cooker for 6-8 hours.

              Check for Tenderness: After cooking, check if the meat is tender (it should easily pull apart with a fork). If needed, let it cook longer.

                Serve: Once ready, remove the roast from the pot and let it rest for 10 minutes before slicing. Serve with the vegetables and broth, garnished with fresh parsley.
