2 lbs beef chuck, cut into 1-inch cubes

4 tablespoons olive oil

1 large onion, diced

3 cloves garlic, minced

4 carrots, sliced into thick rounds

4 medium potatoes, peeled and cubed

2 stalks celery, chopped

1 cup frozen peas

6 cups beef broth

1 cup red wine (optional)

2 tablespoons tomato paste

2 teaspoons dried thyme

1 teaspoon dried rosemary

2 bay leaves

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sear the Beef: In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium-high heat. Season the beef cubes with salt and pepper. Sear the beef in batches until browned on all sides. Remove the beef and set aside.

    Sauté Vegetables: In the same pot, add the remaining olive oil, followed by the diced onion. Sauté until translucent, about 5 minutes. Add the minced garlic and sauté for another minute until fragrant.

      Deglaze with Wine: If using, pour in the red wine to deglaze the pot, scraping up the brown bits from the bottom. Let it simmer for about 2 minutes.

        Add Remaining Ingredients: Return the seared beef to the pot. Stir in the tomato paste, thyme, rosemary, bay leaves, and beef broth. Bring the mixture to a boil.

          Simmer the Stew: Once boiling, reduce the heat to low, cover, and let it simmer for 1.5 hours. After this time, add the carrots, potatoes, and celery. Simmer for an additional 45 minutes until the vegetables and beef are tender.

            Finish with Peas: Add the frozen peas to the stew and cook for 5 more minutes. Taste and adjust seasoning with salt and pepper as needed.

              Serve Hot: Remove bay leaves before serving. Ladle the stew into bowls and garnish with fresh parsley.
