Ingredients
  

1 lb ground beef

1 large onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn kernels, drained

1 can (10 oz) diced tomatoes with green chilies

1 tsp chili powder

1 tsp cumin

½ tsp paprika

1 cup shredded cheddar cheese

1 cup diced bell pepper (any color)

1 can (tub) refrigerated crescent roll dough

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Beef: In a large skillet over medium-high heat, add the ground beef and cook until browned. Drain excess fat.

      Add Aromatics: Add the diced onion and minced garlic to the skillet. Sauté for about 3-4 minutes until the onion is translucent.

        Combine Ingredients: Stir in the black beans, corn, diced tomatoes (with juice), bell pepper, chili powder, cumin, paprika, salt, and pepper. Mix well and let it simmer for 5-7 minutes to let the flavors meld together.

          Assemble the Casserole: Transfer the beef mixture to a greased 9x13 inch baking dish. Sprinkle the shredded cheddar cheese evenly over the top.

            Add Crescent Rolls: Unroll the crescent roll dough and lay it out flat on top of the cheese and filling, making sure to cover as much area as possible. Pinch the seams together to seal.

              Bake: Place the casserole in the preheated oven and bake for 20-25 minutes, or until the crescent rolls are golden brown and the cheese is bubbling.
