Ingredients
  

1 lb ground beef (or turkey for a lighter option)

1 medium onion, diced

1 cup bell peppers, diced (any color)

2 cloves garlic, minced

1 (15 oz) can of corn, drained

1 (15 oz) can of black beans, drained and rinsed

1 (10 oz) can of diced tomatoes with green chilies

1 packet taco seasoning

2 cups shredded cheddar cheese

1 can (biscuits or crescent rolls) dough

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro (optional for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet, heat olive oil over medium heat. Add the diced onion and bell peppers, sautéing for about 5 minutes until they soften.

      Stir in the minced garlic and cook for an additional minute until fragrant.

        Add the ground beef (or turkey) to the skillet, breaking it up with a spatula. Season with salt, pepper, and taco seasoning. Cook until browned and fully cooked, about 7-10 minutes.

          Stir in the corn, black beans, and diced tomatoes with green chilies. Mix well and let it simmer for 2-3 minutes.

            Transfer the beef mixture into a greased 9x13 inch baking dish. Spread it evenly across the bottom.

              Sprinkle 1 cup of shredded cheddar cheese over the beef mixture, spreading it evenly.

                Open the can of biscuits (or crescent rolls) and cut each piece in half or leave them whole for a fluffier top. Arrange the pieces on top of the cheese layer to create a crust (overlap them slightly for better coverage).

                  Bake in the preheated oven for 25-30 minutes, or until the biscuits are golden brown and cooked through.

                    Once out of the oven, sprinkle the remaining 1 cup of cheddar cheese on top. Return to the oven for another 5 minutes, just until the cheese is melted and bubbly.

                      Garnish with fresh cilantro if desired. Let the casserole cool for a few minutes before serving.
