1 lb fresh green beans, trimmed

1 lb baby potatoes, halved

4 slices of thick-cut bacon, chopped

1/2 cup onion, finely chopped

2 cloves garlic, minced

1/4 cup ranch seasoning mix

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

1 cup chicken broth

1 tablespoon olive oil

Fresh parsley, for garnishing (optional)

Instructions
 

In a large pot, add the halved baby potatoes and cover them with water. Bring to a boil over medium-high heat and cook for about 10 minutes, or until they are fork-tender. Drain and set aside.

    While the potatoes cook, heat the olive oil in a large skillet over medium heat. Add the chopped bacon and cook until crispy, approximately 5-7 minutes. Use a slotted spoon to remove the bacon and place it on paper towels to drain excess fat, leaving the rendered fat in the skillet.

      In the same skillet, add the chopped onion and cook for about 3 minutes or until they become translucent. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

        Add the green beans to the skillet and sauté for about 5 minutes. They should turn bright green and tender-crisp.

          Stir in the cooked potatoes, ranch seasoning mix, salt, black pepper, and chicken broth. Mix well to ensure everything is evenly coated.

            Bring the mixture to a gentle boil, then reduce the heat to low and cover the skillet. Allow it to simmer for about 10-15 minutes, or until the green beans are tender and flavors are well blended.

              Remove the skillet from heat and stir in the crispy bacon. Garnish with fresh parsley if desired before serving.
