Ingredients

1 cup unsalted butter, softened

1 cup granulated sugar

1 cup packed brown sugar

2 large eggs

1 teaspoon vanilla extract

3 cups all-purpose flour

2 teaspoons cornstarch

1 teaspoon baking soda

1/2 teaspoon salt

8 oz cream cheese, softened

1/2 cup powdered sugar

1/4 cup caramel sauce (store-bought or homemade)

1/2 teaspoon sea salt flakes (for sprinkling)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

Cream the Butters and Sugars: In a large mixing bowl, use an electric mixer to cream together the softened butter, granulated sugar, and brown sugar until fluffy and light in color.

Add Eggs and Vanilla: Beat in the eggs one at a time, then add the vanilla extract, mixing until well combined.

Mix Dry Ingredients: In a separate bowl, whisk together the flour, cornstarch, baking soda, and salt. Gradually add this dry mixture to the wet mixture, blending until just combined.

Prepare the Cheesecake Filling: In another bowl, mix the softened cream cheese with powdered sugar and caramel sauce until smooth and creamy.

Form the Cookies: Scoop about 2 tablespoons of cookie dough and flatten it slightly in your palm. Place about a teaspoon of the cheesecake filling in the center, then fold the dough around the filling and roll it back into a ball. Repeat with the remaining dough and filling.

Bake the Cookies: Place the filled cookie balls on the prepared baking sheets, leaving space for spreading. Bake for about 10-12 minutes or until the edges start to turn golden.

Add Sea Salt: Once out of the oven, immediately sprinkle each cookie with a pinch of sea salt flakes for that perfect salted caramel flavor.

Cool Down: Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Drizzle with Extra Caramel: For a more indulgent treat, drizzle extra caramel sauce over the cookies before serving.
