1 lb white fish fillets (such as cod or tilapia), cut into bite-sized pieces

1 can (13.5 oz) coconut milk

2 cups fish or vegetable broth

1 lime, juiced and zested

1 small onion, finely chopped

3 cloves garlic, minced

1 thumb-size piece of ginger, grated

1 red bell pepper, diced

1 carrot, sliced thinly

1 cup cherry tomatoes, halved

1-2 green chilies (adjust to taste), finely chopped

1 tablespoon olive oil

1 tablespoon fish sauce (optional)

1 teaspoon sugar

Fresh cilantro or thai basil for garnish

Salt and pepper to taste

Sauté the Aromatics: In a large pot, heat olive oil over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onion becomes translucent, about 3-4 minutes.

    Add Vegetables: Stir in the diced red bell pepper and sliced carrots. Cook for an additional 5 minutes until they start to soften.

      Incorporate Liquids: Pour in the coconut milk and fish broth. Stir to combine and bring the mixture to a gentle simmer.

        Season the Broth: Add the lime juice, lime zest, chopped green chilies, fish sauce, and sugar. Mix well and let it simmer for about 5 minutes to allow the flavors to meld.
