Ingredients

For the Chocolate Filling:

1 ½ cups semi-sweet chocolate chips

3 tablespoons unsweetened cocoa powder

1 cup heavy cream

½ cup granulated sugar

4 large egg yolks

1 teaspoon vanilla extract

2 tablespoons unsalted butter

Pinch of salt

For the Pie Crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1/4 teaspoon salt

For the Golden Meringue:

4 large egg whites

½ teaspoon cream of tartar

1 cup granulated sugar

1 teaspoon vanilla extract

Instructions

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a medium mixing bowl, combine graham cracker crumbs, melted butter, sugar, and salt. Mix until well combined.

        - Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Bake for 10-12 minutes until golden and set. Remove from the oven and let cool completely.

          Make the Chocolate Filling:

            - In a medium saucepan, heat the heavy cream over medium heat until just simmering. Remove from heat and add the chocolate chips and cocoa powder. Let sit for a minute, then stir until smooth.

              - In a separate bowl, whisk together the egg yolks, granulated sugar, vanilla extract, and a pinch of salt. Gradually pour in the warm chocolate mixture, whisking constantly to prevent the eggs from curdling.

                - Return the mixture to the saucepan and cook over medium heat, stirring constantly, until thickened (about 5-7 minutes). Remove from heat and stir in the butter until melted.

                  - Pour the chocolate filling into the cooled pie crust, spreading evenly. Refrigerate for at least 2 hours or until set.

                    Prepare the Golden Meringue:

                      - In a clean mixing bowl, beat the egg whites with an electric mixer until foamy. Add the cream of tartar and continue beating until soft peaks form.

                        - Gradually add the granulated sugar, one tablespoon at a time, continuing to beat until stiff, glossy peaks form. Stir in the vanilla extract.

                          Assemble the Pie:

                            - Once the chocolate layer has set, spread the meringue generously on top of the chocolate filling, using a spatula to create peaks and swirls.

                              Bake the Meringue:

                                - Preheat your oven to 350°F (175°C). Bake the pie for 8-10 minutes, or until the meringue is golden brown. Keep an eye on it to prevent burning.

                                  Chill and Serve:

                                    - Remove the pie from the oven and allow it to cool at room temperature for about 30 minutes. Refrigerate for an additional hour before slicing to allow the layers to meld.

Enjoy your indulgent Classic Chocolate Indulgence Pie with its luscious chocolate filling and beautifully toasted meringue topping!
