Ingredients
  

2 cups cooked white or brown rice

2 cups cooked shredded chicken (rotisserie chicken works well)

1 can (10.5 oz) cream of chicken soup

1 cup chicken broth

1 cup mixed vegetables (peas, carrots, corn)

1 cup shredded cheddar cheese

1/2 cup diced onion

1 teaspoon garlic powder

1/2 teaspoon black pepper

1 teaspoon salt

1 teaspoon dried thyme

1/2 teaspoon paprika (optional)

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large mixing bowl, combine the cooked rice, shredded chicken, cream of chicken soup, chicken broth, mixed vegetables, diced onion, garlic powder, black pepper, salt, thyme, and paprika. Stir until well combined.

      Transfer the mixture into a greased 9x13 inch baking dish. Spread it evenly across the bottom of the dish.

        Sprinkle the shredded cheddar cheese evenly over the top of the casserole.

          Cover the dish with aluminum foil and bake in the preheated oven for 25-30 minutes.

            After 30 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

              Once done, remove from the oven and let it sit for 5-10 minutes before serving. Garnish with fresh parsley if desired.
