Ingredients
  

1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

1 carrot, diced

1 celery stalk, diced

1 (14 oz) can diced tomatoes, with juice

4 cups beef broth

1 cup elbow macaroni

2 tsp Italian seasoning

1 tsp paprika

1/2 tsp black pepper

1 bay leaf

1 cup frozen peas

Salt to taste

Fresh parsley, for garnish (optional)

Instructions
 

In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain any excess fat.

    Add the diced onion, carrot, and celery to the pot. Sauté for about 5-7 minutes or until the vegetables are tender.

      Stir in minced garlic and cook for an additional minute until fragrant.

        Pour in the diced tomatoes with their juice and the beef broth. Stir to combine.

          Add the elbow macaroni, Italian seasoning, paprika, black pepper, and bay leaf. Bring the soup to a boil.

            Once boiling, reduce the heat to low and let the soup simmer for about 10-12 minutes or until the macaroni is cooked al dente.

              Stir in the frozen peas and cook for another 2-3 minutes. Season with salt to taste.

                Remove the bay leaf before serving.

                  Serve hot, garnished with fresh parsley if desired.
