1 loaf of day-old brioche or challah bread, cubed

4 large eggs

1 cup milk (whole or 2%)

1/4 cup heavy cream

1/3 cup granulated sugar

1 tablespoon vanilla extract

1 tablespoon ground cinnamon

1/4 teaspoon nutmeg

Pinch of salt

1/2 cup unsalted butter, melted

1/2 cup brown sugar, packed

Extra cinnamon sugar for topping (1/4 cup sugar mixed with 1 tablespoon cinnamon)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a muffin tin with cooking spray or line with paper liners for easy removal.

    Prep the Bread: Cut the brioche or challah bread into small cubes (about 1-inch pieces). Spread them evenly in a large mixing bowl.

      Make the Custard: In another bowl, whisk together the eggs, milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, nutmeg, and salt until well combined.

        Combine: Pour the egg mixture over the cubed bread and gently mix until all the bread is soaked in the custard mixture. Allow it to sit for about 10-15 minutes, stirring occasionally.

          Prepare the Cinnamon Sugar Mixture: In a small bowl, mix the brown sugar with the melted butter until well combined.

            Fill the Muffin Tin: Using a spoon, fill each muffin cup halfway with the bread mixture. Drizzle a spoonful of the brown sugar mixture over the top of each muffin cup. Then, top with more bread mixture until full.

              Sprinkle Cinnamon Sugar: Generously sprinkle the tops with the extra cinnamon sugar mixture.

                Bake: Bake in the preheated oven for 20-25 minutes or until the tops are golden brown and a toothpick inserted into the center comes out clean.

                  Cool and Serve: Let the muffins cool in the tin for about 5 minutes, then carefully transfer them to a wire rack to cool slightly before serving. Enjoy warm, with maple syrup or whipped cream if desired!
