Ingredients

1 loaf of brioche or challah bread, cut into 1-inch cubes

4 large eggs

1 cup milk (whole or almond)

1 tsp vanilla extract

1 tsp ground cinnamon

¼ tsp nutmeg (optional)

¼ cup granulated sugar

½ cup powdered sugar (for dusting)

4 tablespoons unsalted butter (for frying)

Maple syrup (for serving)

Fresh berries (for garnish, optional)

Instructions

Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, and nutmeg until well combined.

Soak the Bread: Add the bread cubes to the egg mixture, gently folding until all the cubes are coated. Let them soak for about 10-15 minutes so that they absorb the liquid.

Cinnamon Sugar Mix: In a separate small bowl, mix together the granulated sugar and 1 tablespoon of ground cinnamon to create your cinnamon sugar. Set aside.

Heat the Pan: In a large skillet or griddle, melt 2 tablespoons of butter over medium heat. Once the butter is bubbling, add half of the soaked bread cubes, spreading them out in an even layer.

Cook the French Toast: Cook the bread cubes for about 3-4 minutes per side, or until they are golden brown and slightly crispy. Remove them from the skillet and place them on a plate lined with paper towels.

Coat with Cinnamon Sugar: While the cubes are still warm, sprinkle them generously with the cinnamon sugar mixture, tossing gently to coat.

Repeat: Wipe the skillet clean, add the remaining 2 tablespoons of butter, and repeat the cooking process with the remaining bread cubes.

Serve: Serve the cinnamon sugar French toast cubes warm, dusted with powdered sugar and accompanied by maple syrup. Garnish with fresh berries if desired.
