Ingredients
  

1 cup all-purpose flour

1/2 cup water

1/4 cup unsalted butter

1 tablespoon sugar

1/2 teaspoon vanilla extract

1/2 teaspoon salt

2 large eggs

Vegetable oil for frying

1/2 cup granulated sugar (for coating)

1 tablespoon ground cinnamon (for coating)

Instructions
 

In a medium saucepan over medium heat, combine water, butter, sugar, and salt. Bring to a boil, stirring until the butter is melted.

    Reduce the heat to low and add the flour, mixing vigorously until the dough forms a ball and pulls away from the sides of the pan (about 1-2 minutes).

      Remove the pan from heat and let the dough cool for 5 minutes. Then, add the eggs one at a time, mixing well after each addition until fully incorporated.

        Heat the vegetable oil in a deep frying pan or pot to 350°F (175°C).

          While the oil is heating, combine the granulated sugar and ground cinnamon in a shallow dish for coating. Set aside.

            Using a piping bag with a star nozzle, pipe small bite-sized pieces of dough (about 2 inches long) directly into the hot oil, careful not to overcrowd the pan.

              Fry the churro bites for about 2-3 minutes on each side until they are golden brown and puffed up. Use a slotted spoon to remove them from the oil and drain on paper towels.

                While still warm, roll the churro bites in the cinnamon sugar mixture until well coated.

                  Serve immediately for the best taste, or allow to cool slightly and enjoy them with warm chocolate sauce or caramel for dipping.
