Ingredients

1 can of refrigerated cinnamon rolls (8 rolls)

2 medium-sized apples, peeled, cored, and diced (such as Granny Smith)

1/4 cup brown sugar

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1 tablespoon lemon juice

1/4 cup raisins (optional)

1/4 cup chopped walnuts or pecans (optional)

1 tablespoon butter, melted

1/4 cup cream cheese frosting (from the cinnamon roll package or homemade)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Cinnamon Rolls: Open the can of cinnamon rolls and separate them. Flatten each roll slightly with your hands or a rolling pin to form a disc.

Make the Filling: In a medium bowl, combine the diced apples, brown sugar, ground cinnamon, nutmeg, lemon juice, raisins, and chopped nuts. Toss until the apples are evenly coated.

Assemble the Cups: Grease a muffin tin. Place each flattened cinnamon roll disc into the bottom of a muffin cup, pressing it down to form a crust. Fill each cup with the apple mixture, packing it gently.

Add Topping: Brush the tops of the apple-filled cups with melted butter. If desired, sprinkle a little extra cinnamon and sugar over the top for added sweetness.

Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until the cinnamon roll edges are golden brown and the apples are tender.

Frost: Allow the cups to cool for about 5 minutes, then drizzle the cream cheese frosting over the top of each cup.

Serve: Remove the cups from the muffin tin and serve warm for a delightful treat!
