2 cups all-purpose flour

1 ½ teaspoons baking soda

1 teaspoon baking powder

½ teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon nutmeg

½ cup unsalted butter, softened

1 cup granulated sugar

½ cup brown sugar, packed

3 large eggs

1 teaspoon vanilla extract

1 cup buttermilk

3 cups peeled and diced apples (preferably Granny Smith or Honeycrisp)

½ cup chopped walnuts or pecans (optional)

1 tablespoon lemon juice

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan or line it with parchment paper for easier removal.

    Prepare Apples: In a medium bowl, toss the diced apples with lemon juice. This helps to prevent browning and adds a slight tang. Set aside.

      Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.

        Cream Butter and Sugars: In a large mixing bowl, cream the softened butter with granulated sugar and brown sugar until light and fluffy, about 3-4 minutes.

          Add Eggs and Vanilla: Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

            Combine Ingredients: Gradually add the dry ingredients to the butter mixture, alternating with buttermilk. Start and end with the flour mixture, mixing just until combined.

              Fold in Apples and Nuts: Gently fold in the prepared apples and chopped nuts (if using) until evenly distributed throughout the batter.

                Pour & Spread: Pour the batter into the prepared baking pan and spread it out evenly.

                  Bake: Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center comes out clean.

                    Cool Down: Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

                      Serve: Once the cake is completely cool, slice it into squares and serve. Optional: Dust with powdered sugar or drizzle with caramel sauce for an extra indulgent treat!
