Ingredients

1 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 1/2 cups all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

Red and green gel food coloring

1/4 cup powdered sugar (for dusting, optional)

Instructions

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy using an electric mixer.

Add the egg and vanilla extract, and continue to beat until well combined.

In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.

Divide the cookie dough into two equal parts. To one half, add a few drops of red gel food coloring and mix until the color is uniform. To the other half, add green gel food coloring and mix until the desired shade is reached.

Lay a sheet of plastic wrap on a flat surface and place the red dough on one side and the green dough on the other. Fold the plastic wrap over to create a log shape. Roll it tightly, ensuring the colors are side by side. Refrigerate for at least 1 hour or until firm.

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Once chilled, remove the dough from the plastic wrap and slice it into 1/4-inch thick rounds. Place them on the prepared baking sheet, spacing them about 1 inch apart.

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.

Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

If desired, dust the cooled cookies with powdered sugar before serving.
