1 (8 oz) package cream cheese, softened

1/2 cup unsalted butter, softened

3 cups powdered sugar, divided

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

2 teaspoons baking powder

1/4 teaspoon salt

1/2 teaspoon almond extract (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, beat the softened cream cheese and butter until smooth and creamy using an electric mixer.

      Gradually add 2 cups of powdered sugar, beating well until thoroughly combined.

        Add the eggs, vanilla extract, and almond extract (if using), mixing until fully incorporated.

          In a separate bowl, whisk together the flour, baking powder, and salt.

            Gradually add the dry ingredients to the wet mixture, mixing just until combined. Be careful not to overmix.

              The dough will be sticky; cover and chill in the refrigerator for 30 minutes to make handling easier.

                Once chilled, scoop tablespoon-sized portions of dough and roll them into balls. Roll each ball in the remaining 1 cup of powdered sugar until well coated.

                  Place the dough balls onto the prepared baking sheet, spacing them about 2 inches apart.

                    Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may appear soft; this is normal.

                      Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

                        Once cooled, sprinkle with additional powdered sugar or festive sprinkles for a festive touch, if desired.
