For the Crust:

1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

For the Cheesecake Filling:

16 oz cream cheese, softened

½ cup granulated sugar

1 tsp vanilla extract

2 large eggs

1 cup sour cream

2 tbsp all-purpose flour

For the Cherry Topping:

1 can (21 oz) cherry pie filling

1 tbsp lemon juice

Instructions
 

Prepare the Crust: Preheat your oven to 325°F (165°C). In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture resembles wet sand. Press the mixture firmly into the bottom of a greased 9x13 inch baking pan. Bake for 10 minutes until lightly golden, then remove from the oven and let it cool.

    Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the granulated sugar and continue mixing until well combined. Add the vanilla extract and mix until just incorporated.

      Add Eggs and Sour Cream: Add the eggs one at a time, mixing on low speed until just blended. Scrape down the sides of the bowl as needed. Then, mix in the sour cream and flour until smooth and no lumps remain.

        Combine: Pour the cheesecake filling over the cooled crust, spreading it evenly with a spatula.

          Bake: Bake the cheesecake for 30-35 minutes or until the edges are set and the center has a slight jiggle. Turn off the oven and let the cheesecake cool inside for another hour to prevent cracks.

            Prepare Cherry Topping: In a small bowl, mix the cherry pie filling with the lemon juice. Spread the cherry mixture evenly over the baked cheesecake layer once it’s cooled to room temperature.

              Chill: Cover the pan with plastic wrap and refrigerate the bars for at least 4 hours, or preferably overnight, to allow them to set properly.
