1 cup unsalted butter, softened

1 cup granulated sugar

1 cup brown sugar, packed

2 large eggs

2 teaspoons vanilla extract

3 cups all-purpose flour

¾ cup unsweetened cocoa powder

1 teaspoon baking powder

½ teaspoon salt

½ cup chocolate chips (for filling)

½ cup fruit preserves (raspberry or cherry recommended)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    Make the Dough: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

      Combine Dry Ingredients: In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add the dry mixture to the wet mixture, combining until a dough begins to form.

        Chill the Dough: Wrap the dough in plastic wrap and refrigerate for about 30 minutes. This will help it firm up, making it easier to handle.

          Shape the Cookies: Once chilled, take the dough out of the refrigerator. Roll tablespoon-sized amounts into balls and place them on the prepared baking sheets, spacing them about 2 inches apart.

            Create Thumbprints: Use your thumb (or the back of a teaspoon) to gently create a well in the center of each dough ball. Be careful not to press all the way to the sheet.

              Add Chocolate and Preserves: Place a few chocolate chips in each thumbprint and fill the well with your choice of fruit preserves.

                Bake the Cookies: Bake in the preheated oven for 12-15 minutes, or until the edges are set but the center is still soft. Remove from the oven and allow them to cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
