2 ripe bananas

1/2 cup creamy or chunky peanut butter

1 cup dark chocolate chips

1 tablespoon coconut oil (for melting chocolate)

Sea salt (optional, for garnish)

Chopped nuts or sprinkles (optional, for garnish)

Instructions
 

Begin by peeling the bananas and slicing them into 1/2-inch thick rounds.

    On half of the banana slices, spread about 1 teaspoon of peanut butter.

      Top each peanut butter-covered slice with another banana slice to create a sandwich. Repeat until all banana slices are used.

        Place the sandwiches on a parchment-lined baking sheet and freeze them for at least 1 hour, or until solid.

          While the banana sandwiches are freezing, melt the dark chocolate chips and coconut oil together. You can do this in a microwave in 30-second intervals, stirring after each interval, until fully melted and smooth.

            Remove the frozen banana sandwiches from the freezer. Dip each sandwich into the melted chocolate, ensuring they are completely coated. Allow any excess chocolate to drip off.

              Place the chocolate-covered sandwiches back on the parchment paper. If you're using sea salt or any garnishes, sprinkle them on top while the chocolate is still warm.

                Return the sandwiches to the freezer for about 30 minutes, or until the chocolate is set.

                  Serve immediately or store in an airtight container in the freezer for up to a week.
