1/4 tsp salt

2 large eggs

2 tsp vanilla extract

1/2 cup heavy cream

For Assembly:

Crushed chocolate chip cookies (for garnish)

Additional chocolate chips (optional)

Instructions

Prepare the Cookie Crust:

    - Preheat your oven to 350°F (175°C).

      - In a medium bowl, whisk together flour, baking soda, and salt. Set aside.

        - In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

          - Beat in the egg and vanilla extract until well combined.

            - Gradually add the flour mixture, mixing until just combined. Fold in the chocolate chips.

              - Spread the cookie dough evenly into a greased 9-inch round baking dish or a parchment-lined pie pan.

                - Bake for 10-12 minutes, or until golden brown. Allow to cool completely.

                  Make the Pudding Layer:

                    - In a medium saucepan, whisk together the milk, granulated sugar, cornstarch, and salt over medium heat.

                      - In a separate bowl, lightly beat the eggs and set aside.

                        - Continue whisking the milk mixture until it thickens and begins to bubble (about 5-7 minutes).

                          - Once thick, remove from heat. Gradually whisk a small amount of the hot mixture into the beaten eggs to temper them, then slowly whisk the egg mixture back into the saucepan.

                            - Return to the heat and cook for another 2 minutes until fully thickened. Stir in the vanilla extract and heavy cream.

                              - Pour into a bowl, cover with plastic wrap directly on the surface to prevent a skin from forming, and let it cool completely in the fridge.

                                Layer the Pudding:

                                  - Once both the cookie crust and pudding have cooled, begin layering.

                                    - Place the cookie crust in your serving dish, then pour the cooled pudding evenly over the cookie layer.

                                      - Top with a generous layer of whipped cream.

                                        Garnish:

                                          - Sprinkle crushed chocolate chip cookies and extra chocolate chips on top for a delightful finish.

                                            - Chill in the refrigerator for at least 1 hour before serving for best flavors.

                                              Serve:

                                                - Slice into wedges or serve in bowls. Enjoy this irresistible combination of cookie and pudding layers!
