Ingredients
  

1 pound chicken breast, thinly sliced

1 ripe mango, peeled, pitted, and cut into strips

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup sugar snap peas

2 cloves garlic, minced

1 tablespoon ginger, minced

3 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

2 tablespoons vegetable oil

1 tablespoon sesame oil

Salt and pepper to taste

Cooked rice or noodles, for serving

Fresh cilantro, for garnish (optional)

Instructions
 

Prepare the Chicken: Season the sliced chicken breast with a pinch of salt and pepper. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

    Cook the Chicken: Add the chicken to the skillet and stir-fry for about 5-7 minutes until golden brown and cooked through. Remove from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add another tablespoon of vegetable oil. Toss in the minced garlic and ginger, stirring quickly until fragrant (about 30 seconds).

        Add Veggies: Add the sliced bell peppers and sugar snap peas to the skillet, stir-frying for about 3-4 minutes until they start to soften but retain some crunch.

          Combine Chicken and Mango: Return the cooked chicken to the skillet and add the mango strips. Pour in the soy sauce and oyster sauce, mixing everything well until combined.

            Thicken the Sauce: Pour the cornstarch slurry into the skillet and stir until the sauce thickens (about 1-2 minutes). Adjust seasoning with additional salt and pepper if necessary.

              Finish Off: Drizzle the sesame oil over the stir-fry, tossing it all together to ensure even coverage. Remove from heat.

                Serve: Serve the stir-fry over cooked rice or noodles and garnish with fresh cilantro if desired.
