2 cups cooked rotisserie chicken, shredded

4 cups mixed salad greens (like baby spinach, romaine, and arugula)

1 cup shredded red cabbage

1 cup shredded carrots

1/2 cup sliced cucumbers

1/2 cup chopped green onions

1/2 cup chopped cilantro

1/4 cup sliced almonds, toasted

1/4 cup sesame seeds, toasted

For the Dressing:

1/4 cup soy sauce

2 tbsp rice vinegar

2 tbsp honey or agave syrup

2 tbsp sesame oil

1 tbsp fresh lime juice

1 clove garlic, minced

1 tsp grated fresh ginger

Salt and pepper to taste

Instructions
 

Prepare the dressing: In a mixing bowl, whisk together the soy sauce, rice vinegar, honey, sesame oil, lime juice, minced garlic, and grated ginger. Season with salt and pepper to taste.

    Combine the salad ingredients: In a large salad bowl, combine the shredded chicken, mixed salad greens, red cabbage, carrots, cucumbers, green onions, and cilantro.
