Ingredients

4 boneless, skinless chicken breasts

1 cup fresh parsley, finely chopped

6 cloves garlic, minced

1/2 cup olive oil

1/4 cup red wine vinegar

1 teaspoon red pepper flakes

1 teaspoon dried oregano

Salt and pepper to taste

Juice of 1 lime

Zest of 1 lime

Instructions

Make the Chimichurri Sauce: In a medium bowl, combine the chopped parsley, minced garlic, olive oil, red wine vinegar, red pepper flakes, dried oregano, lime juice, lime zest, salt, and pepper. Mix well until all ingredients are thoroughly combined. Set aside for at least 30 minutes to allow the flavors to meld.

Prepare the Chicken: Preheat your grill or skillet over medium-high heat. While it heats up, season the chicken breasts with salt and pepper on both sides.

Marinate the Chicken: Once the grill or skillet is hot, pour half of the chimichurri sauce over the chicken breasts, coating them evenly. Let them marinate for about 15 minutes if time allows.

Cook the Chicken: Place the chicken breasts on the grill or skillet and cook for about 5-7 minutes per side, or until the chicken has a nice golden brown crust and reaches an internal temperature of 165°F (75°C).

Rest the Chicken: Remove the chicken from the heat and let it rest for 5 minutes. This allows the juices to redistribute, keeping the chicken moist and flavorful.

Serve: Slice the chicken and drizzle the remaining chimichurri sauce on top or serve it on the side for dipping.
