Ingredients
  

200g linguine or spaghetti

300g large prawns, peeled and deveined

3 tablespoons olive oil

4 cloves garlic, minced

1-2 red chillies, thinly sliced (adjust based on heat preference)

1 teaspoon red pepper flakes (optional, for extra heat)

1/2 cup cherry tomatoes, halved

1/2 cup white wine (or vegetable broth)

Zest and juice of 1 lemon

2 tablespoons fresh parsley, chopped

Salt and black pepper, to taste

Grated Parmesan cheese, for serving (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the linguine or spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain and set aside.

    Sauté the Prawns: In a large skillet over medium-high heat, add 2 tablespoons of olive oil. Once hot, add the prawns and season with salt and black pepper. Cook for 2-3 minutes until they turn pink and opaque. Remove the prawns from the skillet and set aside.

      Make the Chilli Garlic Sauce: In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and sliced red chillies, sautéing for about 30 seconds until fragrant but not browned.

        Add Tomatoes & Wine: Stir in the cherry tomatoes and cook for 2 minutes until they begin to soften. Pour in the white wine (or vegetable broth) and cook for another 3 minutes, allowing it to reduce slightly.

          Combine Pasta & Prawns: Add the cooked pasta and the sautéed prawns back into the skillet. Toss everything together, adding reserved pasta water a little at a time until the desired sauce consistency is reached.

            Finish with Lemon & Parsley: Stir in the lemon zest, lemon juice, and chopped parsley. Adjust seasoning with salt and black pepper to taste.

              Serve: Plate the pasta and garnish with grated Parmesan cheese, if desired. Serve immediately, enjoying the wonderful aroma of chilli and garlic!
